Herbs are hugely versatile, amplifying the flavour of food to subtly transform and elevate the taste of a dish. They can be added directly to food, or mixed in a sauce with other harmonious ingredients, or we love grinding herbs with a variety of spices and oils to create a paste in a pestle & mortar. A great example of this is French Tarragon. It has a star anise-like taste, with some floral notes and it makes tarragon mayonnaise a good match with grilled mackerel. A French Tarragon-flavoured butter can work its magic over or under the skin of a roast chicken. Add your butter and French Tarragon to a pestle & mortar and bash away. It's the best way to release the most flavour! Another favourite of ours is the wonderful Kaffia / Kaffir Lime Leaf. Drop it in a coconut milk mixture and add to a cream cheese filling for your next cheesecake. You won't be disappointed.
