Cole & Mason Whole Cubeb Peppers
Eat our Whole Cubeb Peppers with a rich lamb or mutton tagine. Season the tagine with ground cubeb. Serve it strewn with toasted sesame seeds and sticky strips of apricot. Then pile on top of a mound of couscous.
Try thinking beyond North Africa. When cooked, cubeb's allspice-like notes come through. So grind and add to a standard shortbread recipe for a different wintry bake. Or experiment by combining cubeb with citrus. Mix with rice wine vinegar, sesame seeds and orange zest to finish a cold soba noodle salad.
Originally from Java, cubeb started travelling the world when Arab merchants began trading it in the 7th century. It became a stalwart of the traditional ras el hanout blend, before ending up in Victorian gentlemen's cigarettes in England.
We've gone back to the pepper's roots and sourced ours from its native Indonesia.
