Eat our Thyme with a classic Sunday roast. Thyme's bright, fresh flavour has enough punch to cut through fatty meats like beef and pork. Once you've boiled your potatoes, put some thyme in with your salt, garlic and any other little touches. Then roast them in duck fat.

Why not try adding thyme to both dinner and dessert. Thyme's zesty aroma plays well with rich chocolate when you cook them together. Cupcakes, brownies and chocolate sauces all fit the bill. Thyme works with potatoes in all their forms. Thyme potato wedges are right at home next to a homemade beef burger with cheese and crispy lettuce.

Thyme's uses throughout history are just as much medicinal as they are culinary. It's been put under pillows to improve sleep and used in antiseptic mouthwashes. And the Romans thought it kept them safe from poison.

Food-wise, you'll find it in countless traditional dishes, from east to west. When thyme is dried, its flavour is most potent towards the end of summer, around August and September.
