Cole & Mason Ground Fennel
Eat our Ground Fennel with a whole sea bass. Lay out foil and create a bed of sliced fennel on top of it. Place a clean, whole sea bass on top of that, then season and stuff with ground fennel, chilli flakes, salt and pepper. Seal the foil around the fish and bake.
Why not try adding to sausage meat. Slice open sausages, squeeze out the meat, then season with ground fennel, cooked garlic and onion. Roll into balls, then fry until golden for quick meatballs. Or stuff courgettes. Mix sausage meat with ground fennel and chilli flakes, pack into hollowed-out courgettes, then bake until the meat is golden brown.
Fennel has a complex taste. It's piney, bitter and packs a punch of aniseed of flavour. For that reason, it's often used to cut through dishes.
It can cut through hot, acidic or fatty meat dishes, which is why it's a handy palate cleanser if you're eating lots of spicy food.
