Cole & Mason Fenugreek Seeds
Eat our Fenugreek Seeds with a spicy lamb kebab. Add crushed fenugreek seeds, minced garlic, a pinch of salt, chopped coriander and spring onions to minced lamb. Shape into kebabs and grill until cooked through. Serve with a cool yoghurt and mint sauce.
Why not try chutneying leftover apples. Chop up some cooking apples (Bramleys work best). Simmer with cider vinegar, brown sugar, crushed fenugreek seeds, a few cloves and a pinch of nutmeg, until thick. Cool and serve with cheese and crackers.
Fenugreek comes from the same family as peas. It's native to India, and mostly found in Indian recipes, though the leaves are a key ingredient in the classic Iranian lamb stew.
The small yellowy-green seeds taste and smell of sweet onions. Toasting them brings out their nutty side. And they're often used to help thicken dals and curries, as well as to add flavour to chutneys and pickles.
