Cole & Mason Black Cardamom Pods
Eat our Black Cardamom Pods with a white fish dish. Bruise, grind and sprinkle the pods into a simmering chicken stock. Use the stock to poach fillets of white fish – halibut works well. Then serve with wild rice and greens.
Why not try adding to drinks. Prepare a simple syrup, and leave the pods to infuse in it for a few days. Add the infused syrup to an Old Fashioned for a slightly smoky taste. Or spice up an iced tea. Add the pods to boiling water with sliced peaches, lemons and honey. Once it's chilled, serve. You could try sprucing it up with a dash of your favourite spirit too.
Like the green variety, black cardamom pods are part of the ginger family. But they don't have a lot else in common.
They're larger, smokier and more savoury, so work well as a way to add a grilled flavour to meatless dishes.
