Eat our African Grains of Paradise with a juicy steak. For a twist on the usual peppercorn sauce, crush up some African grains of paradise on to a plate. Press both sides of your steak into the crushed grains to form a crust, then cook to your own taste. Or add a few grains to sauces or salads, instead of black pepper.

Try thinking sweet not savoury. Stir a few grains into the mix for gingerbread or other spiced cakes and cookies to add a hint of extra heat. Or add a few grains to your apple pie filling.

ORIGIN

As their name suggests, African grains of paradise come from the west coast of Africa: from Sierra Leone all the way up to Angola. The reddish-brown seeds come from the same family as ginger and cardamom and are harvested from July to September.

You might not have come across the grains before, but they've been around since at least the 13th century. Elizabeth I was said to be a fan of their piney, peppery taste.
